Cream Cheese & Bacon-Filled Doritos Crusted Chicken

Ingredients:

4 boneless, skinless chicken breasts

1 (8 oz) package cream cheese, softened

1 cup shredded mozzarella or cheddar cheese

6 slices cooked bacon, crumbled

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

2 cups crushed Nacho Cheese Doritos

2 eggs, lightly beaten

1 cup all-purpose flour

1 tablespoon milk

Oil for frying or baking spray (if baking)


Instructions:

  1. Prepare the Filling:
    In a medium-sized bowl, combine the softened cream cheese, shredded mozzarella or cheddar, crumbled bacon, garlic powder, paprika, and a pinch of salt and pepper. Mix well until all the ingredients are fully incorporated and creamy.
  2. Stuff the Chicken:
    Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to slice all the way through. Spoon a generous amount of the cream cheese and bacon filling into each pocket, pressing the edges of the chicken to seal. You can secure them with toothpicks if needed.
  3. Set Up Breading Stations:
    Place the flour in one shallow bowl. In a second bowl, beat the eggs together with the tablespoon of milk. In a third bowl, add the crushed Doritos.
  4. Coat the Chicken:
    Dredge each stuffed chicken breast first in the flour, making sure it’s completely coated. Then dip it into the egg mixture, letting the excess drip off. Finally, press the chicken into the crushed Doritos, ensuring an even and generous coating.
  5. Cook the Chicken:
    To Fry: Heat oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 4–5 minutes per side, or until the crust is golden brown and the chicken is cooked through (internal temperature should reach 165°F).
    To Bake: Preheat the oven to 375°F (190°C). Place the coated chicken breasts on a baking sheet lined with parchment paper or sprayed with baking spray. Lightly spray the tops of the chicken with more baking spray to help with browning. Bake for 25–30 minutes, or until the chicken is fully cooked and crispy.
  6. Serve:
    Remove toothpicks if used. Let the chicken rest for a few minutes before serving. Enjoy your crispy, cheesy, bacon-stuffed chicken with your favorite sides!
