Ground Beef Tortilla Rolls

Prepare the Filling

Brown the ground beef in a skillet over medium-high heat. Add the diced onion and garlic halfway through. Drain any excess fat, then stir in your seasonings and a splash of water (or tomato sauce) to keep the meat moist but not “soupy.”

Assemble the Layers

Lay a tortilla flat. Spread a thin, even layer of the beef mixture across the entire surface, leaving a ½-inch border at the top edge. Sprinkle a generous handful of cheese and chopped greens (parsley/scallions) over the meat.

Starting from the bottom, roll the tortilla tightly toward the top. Place it seam-side down on a parchment-lined baking sheet to prevent it from unfurling.

20 minutes at 400°F (200°C)
Brush the tops with a little melted butter or oil for extra crunch. Bake until the tortillas are golden brown and the cheese is bubbling out of the ends. Let them rest for 5 minutes before slicing so the layers “set.”
Pro-Tip: The “Crunch” Factor
If you want that ultra-crispy, pastry-like texture shown in the photo, lightly brush the outside of the rolls with a mixture of melted butter and garlic powder halfway through baking. This “fries” the outer layer of the tortilla in the oven.
Serving Suggestion: Serve these with a side of zesty sour cream, salsa, or a quick lime-cilantro dip to cut through the richness of the beef and cheese.
