Pistachio Cake with White Chocolate 🍰
Ingredients:
For the Cake:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1/2 cup finely ground pistachios
For the White Chocolate Ganache:
1/2 cup heavy cream
4 oz (115g) white chocolate, chopped
For Garnish:
1/4 cup chopped pistachios
Directions:
- Preheat your oven to 350°F (175°C) and lightly grease an 8-inch cake pan.
- In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter and sugar until light and airy. Beat in the eggs and vanilla, then mix in the buttermilk along with the ground pistachios.
- Gently incorporate the dry mixture into the wet ingredients until just blended. Transfer the batter to the prepared pan and bake for 30–35 minutes. Allow the cake to cool completely.
- To make the ganache, warm the heavy cream and pour it over the chopped white chocolate. Stir until the mixture becomes silky and smooth.
- Spread the ganache over the cooled cake and finish with a sprinkle of chopped pistachios.
