Pistachio Cake with White Chocolate 🍰

Ingredients:

For the Cake:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1/2 cup finely ground pistachios

For the White Chocolate Ganache:

1/2 cup heavy cream

4 oz (115g) white chocolate, chopped

For Garnish:

1/4 cup chopped pistachios

Directions:

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch cake pan.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream the butter and sugar until light and airy. Beat in the eggs and vanilla, then mix in the buttermilk along with the ground pistachios.
  4. Gently incorporate the dry mixture into the wet ingredients until just blended. Transfer the batter to the prepared pan and bake for 30–35 minutes. Allow the cake to cool completely.
  5. To make the ganache, warm the heavy cream and pour it over the chopped white chocolate. Stir until the mixture becomes silky and smooth.
  6. Spread the ganache over the cooled cake and finish with a sprinkle of chopped pistachios.
