Instructions:
- In a high-powered blender or food processor, add the frozen pineapple chunks, unsweetened almond milk, and non-fat Greek yogurt.
- Blend on high until the mixture becomes smooth and creamy. You may need to stop and scrape down the sides a few times to ensure everything blends evenly.
- If you prefer your ice cream a little sweeter, add the honey or your favorite sugar substitute along with the vanilla extract, and blend again until fully incorporated.
