ICE CREAM 5 MINUTES


You’ll never want store-bought ice cream again! Make this 3-ingredient ice cream in just 5 minutes!

Ingredients:

2 cups frozen pineapple chunks (0 points)

1/2 cup unsweetened almond milk (0 points)

1/2 cup non-fat Greek yogurt (0 points)

1 tablespoon honey or your favorite sugar substitute (optional – 1 point)

1/2 teaspoon vanilla extract (0 points)

Instructions:

  1. In a high-powered blender or food processor, add the frozen pineapple chunks, unsweetened almond milk, and non-fat Greek yogurt.
  2. Blend on high until the mixture becomes smooth and creamy. You may need to stop and scrape down the sides a few times to ensure everything blends evenly.
  3. If you prefer your ice cream a little sweeter, add the honey or your favorite sugar substitute along with the vanilla extract, and blend again until fully incorporated.
  4. Once the mixture reaches a soft-serve consistency, it’s ready to enjoy!
  5. Serve immediately for a soft, creamy texture. If you prefer a firmer ice cream, transfer the mixture to a freezer-safe container and freeze for 1–2 hours before scooping.
