Chicken Parmesan Grilled Cheese Sandwich

This sandwich is the perfect fusion of two comfort food favorites: chicken Parmesan and grilled cheese. It’s crispy, cheesy, saucy, and packed with flavor—great for lunch, dinner, or even a hearty snack. Let’s get started!

Ingredients:

  • 2 slices of bread (Choose a sturdy bread like sourdough, ciabatta, or a thick white bread to hold all the fillings without getting soggy)
  • 1 cup cooked chicken breast, shredded or thinly sliced (leftovers work great, or you can cook fresh)
  • 1/2 cup marinara sauce (store-bought or homemade)
  • 1/2 cup grated Parmesan cheese (adds salty, nutty flavor)
  • 1/2 cup shredded mozzarella cheese (for that gooey, melty texture)
  • 2 tablespoons olive oil or butter (for grilling the sandwich and giving it a golden, crispy crust)
  • 1/2 teaspoon dried basil (optional, but adds a nice Italian herb note)
  • 1/2 teaspoon garlic powder (optional, enhances the savory flavors)

Instructions:

1. Prepare the Chicken

  • If you don’t have pre-cooked chicken, season a chicken breast with salt, pepper, and a little olive oil. Bake at 375°F (190°C) for 20–25 minutes or until fully cooked.
  • Let it cool slightly, then shred it with two forks or slice it thinly, depending on your texture preference.
  • If desired, mix the chicken with a tablespoon of marinara sauce for added flavor and moisture.

2. Assemble the Sandwich

  • Lay out your two slices of bread on a clean surface or cutting board.
  • Spread a generous but even layer of marinara sauce on one side of each slice.
  • On one slice (sauce side up), layer the shredded or sliced chicken evenly.
  • Sprinkle the grated Parmesan cheese over the chicken.
  • Follow with the shredded mozzarella for that classic cheesy melt.
  • If using, sprinkle a pinch of dried basil and garlic powder over the cheese.
  • Top with the second slice of bread, sauce side down, pressing gently to hold everything together.

3. Grill the Sandwich

  • Heat a skillet or non-stick frying pan over medium heat.
  • Add 1 tablespoon of olive oil or butter to the skillet and let it melt and coat the pan.
  • Carefully place your sandwich into the skillet.
  • Cook for about 3–4 minutes on each side, or until the bread is golden brown and crispy, and the cheese inside is fully melted. You can gently press the sandwich down with a spatula for even browning and better melting.
  • If the bread browns too quickly and the cheese hasn’t melted yet, lower the heat slightly and cover the pan with a lid for 1–2 minutes to help it along.

4. Serve and Enjoy

  • Once grilled to perfection, remove the sandwich from the pan and let it rest for a minute before slicing—it’ll be hot!
  • Cut in half and serve immediately. Optional: serve with extra marinara sauce on the side for dipping.
  • Pairs well with a light salad, soup, or fries.
