- 300ml Heavy cream, chilled
- 1 tbsp Vanilla extract
- 1 tbsp Lemon juice
- Gel food coloring (Pink, Blue, Yellow, and Green)
Instructions
1. Prepare the Base In a medium bowl, mix the crushed crackers, melted butter, and sugar until it feels like wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a glass to smooth it out. Place the pan in the freezer to firm up while you make the filling.
2. Whip the Cream In a separate chilled bowl, whip the heavy cream until stiff peaks form. Set aside.
3. Beat the Cream Cheese In a large bowl, beat the softened cream cheese and powdered sugar together until completely smooth and fluffy. Stir in the vanilla extract and lemon juice.
