Ingredients

For the Cookie Dough

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar

2 large eggs

1 tbsp vanilla extract

3 cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp cinnamon

For the Cheesecake Filling

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

For the Churro Coating

½ cup granulated sugar

1 tbsp cinnamon

4 tbsp melted butter

Instructions

1. Prepare the Cheesecake Filling:

In a small bowl, mix the cream cheese, powdered sugar, and vanilla until smooth.

Scoop teaspoon-sized portions onto a lined baking sheet and freeze for at least 30 minutes.

2. Make the Cookie Dough:

In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy.

Add eggs and vanilla, mixing until well combined.

In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

Gradually mix dry ingredients into the wet ingredients until a dough forms.

3. Assemble the Cookies:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Scoop about 2 tbsp of cookie dough, flatten it, and place a frozen cheesecake ball in the center.

Cover with more dough, rolling it into a ball, ensuring the cheesecake is sealed inside.

Arrange the cookies on the baking sheet, leaving space for spreading.
