Velvet Strawberry Cheesecake Recipe

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp melted butter

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ½ cup heavy cream

For the Strawberry Topping:

  • 2 cups fresh strawberries, sliced
  • ½ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions:

1. Make the Crust:

  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes, then let cool.

2. Make the Cheesecake Filling:

  • Beat cream cheese and sugar until smooth and creamy.
  • Add vanilla, then mix in eggs one at a time, beating on low speed.
  • Stir in sour cream and heavy cream until velvety smooth.
  • Pour over the cooled crust.

3. Bake the Cheesecake:

  • Place the springform pan in a larger pan filled with hot water (water bath method).
  • Bake for 55-60 minutes, until the center is slightly jiggly but set.
  • Turn off the oven, crack the door, and let it cool for 1 hour inside.
  • Chill in the refrigerator for at least 4 hours (overnight is best).

4. Make the Strawberry Topping:

  • In a saucepan, combine strawberries, sugar, and lemon juice over medium heat.
  • Cook for about 5 minutes until the strawberries break down.
  • Stir in the cornstarch mixture and cook until thickened. Let cool.

5. Assemble & Serve:

  • Pour the strawberry topping over the cheesecake.
  • Garnish with whipped cream or fresh strawberries for extra elegance.
