Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a small bowl, combine 1 cup of raisins with 1/2 cup of rum. Let the raisins soak for at least 30 minutes to absorb the flavors.
3. In a large mixing bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy.
4. Add 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
5. In another bowl, whisk together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
6. Gradually add the dry ingredients to the butter mixture, alternating with 1/2 cup of milk. Begin and end with the flour mixture, mixing until just combined.
7. Fold in the soaked raisins along with any remaining rum.
8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
10. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
11. For an optional glaze, mix 1 cup of powdered sugar with 2 tablespoons of rum until smooth. Drizzle over the cooled cake before serving.
