Blackened Salmon Stuffed with Spinach
Ingredients:
Fresh salmon fillets
Fresh spinach leaves
Cream cheese
Garlic, minced
Parmesan cheese, grated
Cajun seasoning
Olive oil
Lemon juice
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a pan over medium heat, sauté the garlic in a little olive oil until fragrant. Add the spinach and cook until wilted. Remove from heat and mix in cream cheese and Parmesan.
3. Slice a pocket into each salmon fillet and generously fill it with the spinach mixture.
4. Coat the salmon fillets with Cajun seasoning, pressing it in for a bold flavor.
5. Heat a skillet with a bit of oil and sear the salmon on both sides until blackened.
6. Transfer to the oven and bake for about 10 minutes, or until cooked through.
7. Drizzle with fresh lemon juice before serving.
