Crispy Vegetable Fritters Recipe

Ingredients:

2 cups grated zucchini

1 large carrot, grated

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated Parmesan  cheese

1/2 cup all-purpose flour

1 large  egg, beaten

1/4 cup chopped fresh parsley

1/4 cup chopped fresh dill

Salt and pepper, to taste

Olive oil, for frying

Instructions:

Prepare the Vegetables: Start by placing the grated zucchini into a clean kitchen towel. Squeeze out as much moisture as possible; this step is crucial for achieving fritters that are crispy rather than soggy.

Combine the Ingredients: In a large mixing bowl, combine the squeezed zucchini, grated carrot, chopped onion, minced garlic, grated Parmesan cheese, all-purpose flour, beaten egg, chopped parsley, and dill. Season the mixture with salt and pepper to taste, then stir until all ingredients are well incorporated.

Shape the Fritters: Using your hands, take a portion of the mixture and shape it into a small patty. Repeat this process until all the mixture is formed into patties.



Heat the Oil: In a large skillet, heat a generous amount of olive oil over medium-high heat.

Fry the Fritters: Carefully place the vegetable patties in the hot oil. Fry for approximately 3-4 minutes on each side, or until they are golden brown and crispy. If necessary, cook the fritters in batches to avoid overcrowding the skillet.

Drain and Serve: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
