Tuscan White Bean Soup


 Here's a delicious and hearty Tuscan White Bean Soup recipe. This Italian-inspired soup is filled with vegetables, herbs, and creamy white beans, making it both comforting and nutritious.


Ingredients:


2 tbsp olive oil


1 medium onion, diced


2 carrots, diced


2 celery stalks, diced


4 cloves garlic, minced


1 can (15 oz) diced tomatoes, with juices


4 cups vegetable or chicken broth


2 cans (15 oz each) white beans (such as cannellini), drained and rinsed


1 bunch of kale or spinach, chopped (about 4 cups)


1 tsp dried thyme


1 tsp dried rosemary


Salt and pepper to taste


Red pepper flakes, to taste (optional)


Fresh basil or parsley, chopped, for garnish (optional)


Freshly grated Parmesan cheese, for garnish (optional)



Instructions:


1. Sauté Vegetables:

In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute, until fragrant.



2. Add Tomatoes and Herbs:

Stir in the diced tomatoes, thyme, rosemary, salt, pepper, and red pepper flakes if using. Cook for about 2 minutes to let the flavors blend.



3. Add Broth and Beans:

Pour in the vegetable or chicken broth and add the white beans. Stir to combine, then bring the soup to a boil. Reduce heat to a simmer and cook for 15-20 minutes, allowing the flavors to meld.



4. Add Greens:

Stir in the chopped kale or spinach and cook for another 5 minutes, until the greens are wilted and tender.



5. Serve:

Taste and adjust seasoning with salt and pepper if needed. Ladle the soup into bowls, garnish with fresh basil or parsley and a sprinkle of Parmesan cheese if desired, and enjoy!
