Southwest Chicken Wrap


 A Southwest Chicken Wrap is a flavorful and satisfying meal that combines grilled chicken, fresh vegetables, and a tangy Southwest dressing. It’s perfect for a quick lunch or dinner. Here’s a simple recipe you can make at home:


Ingredients:


2 boneless, skinless chicken breasts


1 tablespoon olive oil


1 teaspoon chili powder


1 teaspoon cumin


1/2 teaspoon smoked paprika


1/2 teaspoon garlic powder


Salt and pepper to taste


4 large flour tortillas


1 cup Romaine lettuce, chopped


1 cup black beans, drained and rinsed


1 cup corn kernels (canned, fresh, or frozen)


1/2 cup shredded cheese (cheddar or Mexican blend)


1 large tomato, diced


1/4 cup red onion, finely diced


1 avocado, sliced


1/4 cup chopped cilantro (optional)


Juice of 1 lime


1/2 cup Southwest dressing (see below for a simple recipe)



Southwest Dressing (Optional):


1/2 cup mayonnaise or Greek yogurt


2 tablespoons sour cream


1 tablespoon lime juice


1 teaspoon chili powder


1/2 teaspoon garlic powder


1/2 teaspoon cumin


Salt and pepper to taste



Instructions:


1. Prepare the Chicken:


Rub the chicken breasts with olive oil, then season with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.


Heat a grill pan or skillet over medium-high heat and cook the chicken for about 5-6 minutes per side, until fully cooked (internal temperature of 165°F).


Let the chicken rest for a few minutes, then slice it into thin strips.



2. Make the Southwest Dressing:


In a small bowl, whisk together mayonnaise (or Greek yogurt), sour cream, lime juice, chili powder, garlic powder, cumin, salt, and pepper. Adjust seasonings to taste.



3. Assemble the Wraps:


Lay out a tortilla and spread a couple of tablespoons of Southwest dressing in the center.


Add a layer of chopped lettuce, followed by black beans, corn, diced tomatoes, red onion, shredded cheese, avocado slices, and sliced chicken.


Squeeze a bit of lime juice over the filling and sprinkle with chopped cilantro (if using).



4. Wrap and Serve:


Fold in the sides of the tortilla, then roll it tightly from bottom to top.


Slice the wrap in half and serve with extra Southwest dressing or your favorite salsa.



Tips:


Grill Option: For an extra crispy texture, lightly grill the wraps on a panini press or skillet for a few minutes on each side.


Add Spice: Add jalapeño slices or hot sauce for a spicier kick.
