Mac and Cheese Meatloaf Casserole


Here's a tasty recipe for Mac and Cheese Meatloaf Casserole that combines the comfort of mac and cheese with savory meatloaf. It's sure to be a crowd-pleaser!


Ingredients


For the Meatloaf Layer:


1 lb ground beef (or a mix of beef and pork)


1/2 cup breadcrumbs


1 egg


1/4 cup milk


1 small onion, finely chopped


2 cloves garlic, minced


1 tbsp Worcestershire sauce


Salt and pepper, to taste


1/2 cup ketchup (for topping)



For the Mac and Cheese Layer:


2 cups elbow macaroni (or pasta of your choice)


2 tbsp butter


2 tbsp flour


1 1/2 cups milk


2 cups shredded cheddar cheese (or a mix of cheeses)


Salt and pepper, to taste


Optional: a pinch of paprika or mustard powder for added flavor



Instructions


1. Preheat Oven: Preheat your oven to 350°F (175°C).



2. Prepare the Meatloaf Layer:


In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix well.


Press the meat mixture evenly into a greased 9x13-inch baking dish.


Spread the ketchup evenly over the meat layer.




3. Prepare the Mac and Cheese:


Cook the macaroni according to package instructions. Drain and set aside.


In a medium saucepan, melt the butter over medium heat. Stir in the flour to create a roux, and cook for 1-2 minutes.


Gradually add the milk, whisking constantly until the mixture thickens.


Add the shredded cheese, and stir until smooth. Season with salt, pepper, and optional paprika or mustard powder.


Combine the cheese sauce with the cooked macaroni.




4. Assemble the Casserole:


Spread the mac and cheese layer evenly over the meatloaf layer in the baking dish.




5. Bake: Place the casserole in the oven and bake for 30-35 minutes until the meatloaf is cooked through and the top is bubbly and golden.



6. Serve: Let the casserole rest for a few minutes, then slice and serve warm.




Optional Additions


Top with additional shredded cheese or breadcrumbs for a crispy topping.


Garnish with chopped parsley or chives for color.
