Mac and Cheese Meatloaf Casserole


 Here's a comforting, hearty Mac and Cheese Meatloaf Casserole recipe that combines two favorites: mac and cheese with a flavorful meatloaf base. Perfect for family dinners!


Ingredients:


For the Meatloaf Base:


1 lb ground beef (or a mix of ground beef and ground pork)


1/2 cup breadcrumbs


1/4 cup grated Parmesan cheese


1/2 small onion, finely diced


1 large egg


1/4 cup ketchup


1 tablespoon Worcestershire sauce


Salt and pepper to taste



For the Mac and Cheese Topping:


1 1/2 cups elbow macaroni


2 tablespoons butter


2 tablespoons all-purpose flour


1 1/2 cups milk (whole milk for creaminess)


2 cups shredded cheddar cheese


Salt and pepper to taste


1/2 teaspoon mustard powder (optional, for extra flavor)


1/4 cup breadcrumbs (optional, for topping)



Instructions:


1. Prepare the Meatloaf Base


1. Preheat your oven to 350°F (175°C).



2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan, diced onion, egg, ketchup, Worcestershire sauce, salt, and pepper.



3. Mix until well combined and press this mixture evenly into the bottom of a greased 9x13 inch baking dish to form the meatloaf layer.




2. Prepare the Mac and Cheese


1. Cook the macaroni according to the package instructions until al dente, then drain and set aside.



2. In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, cooking for 1-2 minutes.



3. Slowly whisk in the milk and continue to cook, stirring constantly, until the sauce thickens (about 5 minutes).



4. Remove from heat and stir in the shredded cheese, mustard powder (if using), and season with salt and pepper.



5. Fold the cooked macaroni into the cheese sauce until well coated.




3. Assemble and Bake


1. Spoon the mac and cheese mixture over the meatloaf base in the baking dish.



2. If desired, sprinkle breadcrumbs over the mac and cheese for a crispy topping.



3. Bake in the preheated oven for 30-35 minutes, or until the meatloaf is cooked through and the mac and cheese is bubbly and golden on top.




4. Serve
