Ingredients:


1 tablespoon olive oil


1 onion, chopped


2 garlic cloves, minced


3 carrots, sliced


2 celery stalks, chopped


1 bell pepper, chopped (any color)


4 cups cabbage, chopped


1 can (14.5 oz) diced tomatoes


6 cups vegetable or chicken broth


1 teaspoon dried thyme


1 teaspoon dried basil


1/2 teaspoon paprika


Salt and pepper to taste


1-2 cups chopped kale or spinach (optional)


1/2 lemon, juiced (optional, for added brightness)



Instructions:


1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened, about 3-4 minutes.



2. Add Remaining Vegetables: Stir in the carrots, celery, bell pepper, and cabbage. Sauté for another 5 minutes, stirring occasionally.



3. Add Broth and Seasonings: Pour in the diced tomatoes (with juice) and broth. Add thyme, basil, paprika, salt, and pepper. Stir well to combine.
