Creamy Alfredo Lasagna Soup

Here's a delicious recipe for Creamy Alfredo Lasagna Soup, perfect when you're craving something rich, creamy, and comforting. This dish combines the flavors of Alfredo sauce and lasagna in a warm, hearty soup!

Ingredients:

1 lb Italian sausage (or ground beef or turkey)

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth (low sodium if preferred)

1 can (14.5 oz) diced tomatoes, undrained

1 cup heavy cream (or half-and-half for a lighter option)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

8 lasagna noodles, broken into pieces

2 cups spinach or kale (optional, for added greens)

Fresh basil or parsley, chopped (for garnish)

Instructions:

1. Cook the Sausage: In a large pot over medium heat, add olive oil. Add the sausage, breaking it up as it cooks, until browned. If there’s excess fat, drain it.

2. Sauté Aromatics: Add the onion and garlic to the pot, and sauté until softened, about 3-4 minutes.

3. Simmer: Add the chicken broth, diced tomatoes, Italian seasoning, and lasagna noodles. Bring to a boil, then reduce heat to medium-low. Let the soup simmer, stirring occasionally, until the noodles are tender (about 10 minutes).

4. Make it Creamy: Lower the heat and slowly stir in the heavy cream, mozzarella, and Parmesan until melted and smooth. Add salt and pepper to taste.

5. Add Greens: Stir in spinach or kale if using, allowing it to wilt for a minute.

6. Serve: Ladle the soup into bowls and garnish with fresh basil or parsley.

Tips:

Serve with a slice of garlic bread to soak up the delicious broth!

For extra cheesy goodness, sprinkle more mozzarella on top of each bowl before serving.

Enjoy this creamy, indulgent twist on lasagna in a bowl!
