 Here’s a comforting Beef and Cabbage Soup recipe, packed with tender beef, hearty vegetables, and cabbage for a cozy meal that’s full of flavor!


Ingredients:


1 lb ground beef (or stew meat, cubed)


Salt and pepper, to taste


1 tbsp olive oil (if using stew meat)


1 large onion, diced


3 cloves garlic, minced


2 carrots, sliced


2 celery stalks, sliced


4 cups green cabbage, chopped


1 can (14.5 oz) diced tomatoes, undrained


6 cups beef broth (low sodium if preferred)


1 tsp dried thyme


1 tsp smoked paprika


1 bay leaf


1 tbsp Worcestershire sauce (optional, for added depth)


Fresh parsley, chopped (for garnish)



Instructions:


1. Cook the Beef:


For ground beef: In a large pot over medium heat, cook ground beef until browned. Season with salt and pepper, then drain excess fat.


For stew meat: Season the meat with salt and pepper. In a large pot, heat olive oil over medium-high heat, then brown the beef on all sides. Remove and set aside.




2. Sauté Vegetables: In the same pot, add a bit more oil if needed. Sauté the onion, garlic, carrots, and celery until they begin to soften, about 5 minutes.



3. Simmer the Soup: Add the browned beef (or stew meat), cabbage, diced tomatoes, beef broth, thyme, smoked paprika, bay leaf, and Worcestershire sauce (if using) to the pot. Stir to combine.



4. Cook: Bring the soup to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes, or until the beef is tender and the flavors are well combined.



5. Finish and Serve: Remove the bay leaf, adjust seasoning with salt and pepper if needed, and garnish with fresh parsley.




Tips:


Add potatoes for extra heartiness, or a pinch of red pepper flakes for a hint of spice.
