Cheesy Potato Burritos


 Cheesy Potato Burritos are a delicious and comforting meal that combines creamy, cheesy flavors with crispy potatoes wrapped in a warm tortilla. Here’s a simple recipe you can try at home:


Ingredients:


2 large potatoes, diced into small cubes


1 tablespoon olive oil


1 teaspoon garlic powder


1 teaspoon onion powder


1 teaspoon smoked paprika


Salt and pepper to taste


1 cup shredded cheese (cheddar or a Mexican blend)


1/2 cup sour cream


1/2 cup salsa (optional)


1 cup refried beans (optional)


1/2 cup nacho cheese sauce or queso


4 large flour tortillas


1/4 cup chopped green onions (optional)


Hot sauce (optional)



Instructions:


1. Prepare the Potatoes:


Preheat your oven to 425°F (220°C).


Toss the diced potatoes in olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.


Spread the potatoes evenly on a baking sheet lined with parchment paper.


Bake for 20-25 minutes, flipping halfway, until they are crispy and golden brown.



2. Heat the Tortillas:


While the potatoes are baking, warm up the flour tortillas in a dry skillet or in the microwave to make them more pliable.



3. Assemble the Burritos:


Spread a spoonful of refried beans (if using) onto each tortilla.


Add a generous scoop of crispy potatoes on top.


Drizzle with nacho cheese sauce and sprinkle shredded cheese over the potatoes.


Add a dollop of sour cream and salsa (if desired).

4. Roll the Burritos:


Fold in the sides of the tortilla, then roll it up from bottom to top, making sure to tuck in the filling as you roll.
