Ingredients
Pie crusts: 2 (store-bought or homemade)
Apples: 6–7 medium, peeled, cored, and sliced (Granny Smith or Honeycrisp work well)
Sugar: 3/4 cup
Brown sugar: 1/4 cup
Flour: 2 tablespoons
Cinnamon: 1 1/2 teaspoons
Nutmeg: 1/4 teaspoon
Salt: a pinch
Lemon juice: 1 tablespoon
Butter: 2 tablespoons, cut into small pieces
Egg: 1, beaten (for egg wash)
Instructions
Preheat the oven to 425°F (220°C).
Prepare the filling: In a large bowl, combine sliced apples, sugars, flour, cinnamon, nutmeg, salt, and lemon juice. Mix well and let sit for 10 minutes.
Assemble the pie: Place one pie crust into a 9-inch pie dish. Pour the apple filling into the crust and dot the top with butter pieces.
Top crust: Place the second crust over the filling. Trim any excess and crimp the edges to seal. Cut small slits in the top for steam to escape.
Egg wash: Brush the top crust with the beaten egg for a golden finish.
Bake: Place the pie on a baking sheet and bake for 45–50 minutes, or until the crust is golden and the filling is bubbling. Cover the edges with foil if they brown too quickly.
Cool: Let the pie cool for at least 2 hours before serving.
