Ingredients:

1 3/4 cups all-purpose flour


1 tablespoon pumpkin pie spice

1 teaspoon baking soda


1/2 teaspoon salt


1 (15 oz) can pumpkin puree


1 cup granulated sugar


1/2 cup packed brown sugar


2 large eggs


1/2 cup vegetable oil


1 tablespoon vanilla extract


Cream Cheese Swirl:oz cream cheese, softened


1/4 cup granulated sugar


1 large egg yolk


2 teaspoons vanilla extract


Directions:

Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.


Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, and salt until well combined.


Combine Wet Ingredients: In a separate large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and creamy.


Incorporate Dry Ingredients: Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix.


Fill Muffin Cups: Fill each muffin cup about 3/4 full with the pumpkin batter, distributing evenly among the cups.
