Grilled Cheese with Gouda


 Grilled Cheese with Gouda, Roasted Mushrooms, and Onions 


Ingredients:


8 oz mushrooms, sliced

1 medium onion, sliced (preferably sweet)

2 tbsp olive oil

Salt and pepper, to taste

4 tbsp butter

4 slices of your favorite bread

1 cup gouda cheese, shredded


Instructions:


Preheat the oven to 400°F (200°C).

Prepare the vegetables: On a baking sheet, combine the mushrooms and onion with olive oil, salt, and pepper. Toss to coat evenly and spread out in a single layer.

Roast the vegetables in the preheated oven for about 20 minutes, or until they are caramelized and tender.

Melt the butter: While the vegetables are roasting, heat a skillet over medium and add the butter, allowing it to melt completely.

Assemble the sandwiches: Spread a layer of shredded gouda on a slice of bread. Top with an even layer of the roasted mushrooms and onions. Add another layer of gouda to ensure the sandwich sticks together when melted. Season with a little more salt and pepper if desired, and cover with another slice of bread.

Grill the sandwiches: In the skillet with melted butter, place the sandwich down, pressing lightly. After about a minute, carefully flip the sandwich to grill the other side. Cook each side for 2-3 minutes until golden brown and the cheese has melted thoroughly.
